Thandai mix is ​​a fragrant mixture of nuts and spices used to make beverages and desserts.  Here, this homemade thandai mix is ​​used to make an eggless cake.  Decorated with rose patles whipped cream cheese frosting and pistachios, it makes for a stunning dessert!



 Once you make the thandai powder, just add some to a basic sponge cake batter.  I used an eggless recipe this time, because I used yogurt in place of eggs and it made for a soft cake with the perfect golden crumb.  Thandai or sardai is a cooling beverage made by blending milk, nuts, and spices.  To make matters easier, a thandai mix powder cab be made and stored.  Simply dissolve the powder in a cup of milk and enjoy.  For homemade thandai mix, you need almonds, pistachios, cashew nuts, watermelon seeds, poppy seeds (khus khus), fennel seeds, cardamom, black peppercorns (just a few), saffron and rose petal.

  Ingredients
 • 2 cups all purpose flour
 • 1 TSP baking powder
 • 1/2 TSP baking soda
 • 2 tbsp thandai powder
 • 3/4 cup caster sugar
 • 3/4 cup oil
 • 1cup milk
 • 1/2 cup yogurt (use full fat for best results)
 • 1 TSP vanilla extract
 • 1/4 TSP rose water
 • 1tbsp lemon juice
 • whipped cream
 • 8 rose petals
 • 6-7 pistachios

 For Thandai Mix powder: -

  Almonds - 12

  Pistachios - 12

  Cashew nuts - 8

  Watermelon seeds - 1 tbsp (if you can find it)

  Poppy seeds - 1 tbsp

  Green cardamom - 8-10 pods

  Fennel seeds - 1 tbsp

  Black peppercorns - 5-6

  Dried rose petals - 1 tbsp

   Saffron - ½ Tbsp



 How to make thandai mix powder: -
 • Coarsely powder all the ingredients.  You can use an electric coffee / spice grinder or a clean mortar-pestle.  Store thandai mix in a clean jar and use as needed.

 How to make thandai cake: -

 • take the all 2cup all flour, add 1 tsp baking powder, 1 / 2tsp baking soda, add 2 tbsp thandai powder in a medium bowl .whisk thoroughly combine set aside.

 • Then in a large mixing bowl at the yoghurt, oil and sugar beat on medium high speed until combined then increase the speed and beat well for 2 minutes.

 • Add Vanilla extract, rose water and lemon juice.  beat beriefly to combine.
 • tip in the dry ingredients slowly in two parts alternative with the milk and lemon juice mixture.

 • Then thandai cake preheat the oven to 350 degree.  Lightly grease and flour the sides of a baking pan.  Line bottom with parclment paper and grease lightly with oil set aside.

 • scrape the sides and beat on medium speed until just combined .do not over mix.  batter will be thick.

 • fill the prepare baking pan with batter and smooth the top with spatula.  Tab the pan a couple of times on the counter - top to get rid of any air bubbles.

 • back for 28 -32 minute or until the cake passes the toothpick test.

 • remove cake pan from over and cool on a wire rack for 10 minutes and cool the cake completely on a wire rack before frosting.

 • Then in a large bowl add cold heavy whipped cream and beat at low speed for a minute.  and beat on high speed until soft peaks from beat until the frosting is smooth and fluffy .you can lightly whip the frosting again before using.

 • Then decorating spread whipped cream all over the cooled thandai cake.  make pretty patterns with a spatula or spoon.

 • Then serve the piece of cake plate and add some rose petals and pistachios, & add thandai milk
