 Restaurant style dal tadka and jeera rice

Dal Tadka is one of the most popular lentil dish served in Indian restaurants. Basically, dal tadka is cooked lentils which are tempered with oil or ghee fried spices & herbs. Today I am sharing with restaurant style dal tadka and jeera rice recipe.

Ingredients

for pressure cooking:

•½ cup toor dal rinsed

•2 tbsp masoor dal rinsed

• ¼ tsp turmeric

• ½ tsp salt

• 1 tsp oil

• 1½ cup water


Ingredients for dal:


• 2 tbsp ghee

• ½ tsp cumin / jeera

• pinch hing / asafoetida

• 2 dried red chilli

• 2 clove garlic crushed

• 1 inch ginger crushed

•1 chilli slit

•1 onion finely chopped

• ¼ tsp turmeric

• ½ tsp kashmiri red chilli powder

• ½ tsp coriander powder

• ½ tsp salt

• 1 tomato finely chopped

• 2 tbsp coriander finely chopped

• 1 tsp kasuri methi crushed

•¼ tsp garam Masala


Ingredients for dal tadka:-

•1 tsp ghee

•½ tsp cumin / jeera

•pinch hing / asafoetida

•1 dried red chilli

•¼ tsp kashmiri red chilli powder

•1 tsp coriander finely chopped

How to make dal tadka restaurant style:-


•firstly, in a pressure cooker take ½ cup toor dal, 2 tbsp masoor dal. you can also add moong dal if you prefer.

•also add ¼ tsp turmeric, ½ tsp salt, 1 tsp oil and 1½ cup water.

•pressure cook for 5 whistles or until dal is cooked well.

•add 1 cup water and adjust consistency. keep aside.

•now in a large kadai heat 2 tbsp ghee and splutter ½ tsp cumin, 1 pinch hing and 2 dried red chilli.

•also add 2 clove garlic, 1 inch ginger, 1 chilli and saute slightly.

•further add 1 onion and saute until it turns golden brown.

•keeping the flame on low add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder and ½ tsp salt.

•add 1 tomato and saute until it turns soft and mushy.

•add in cooked dal and stir well adjusting consistency as required.

•simmer for 5 minutes or until flavours are well combined.

•Next heat 3 tablespoons oil or ghee in a small pan. First, add 1 teaspoon cumin seeds and crackle them. 1tsp red chilli powder  cumin should get fried and not be raw, but don’t burn them.

•You can mix the dal with tempering or serve the dal tadka with the tempering on top it. Garnish with coriander leaves. Serve it hot with steamed cumin rice.

• now add 2 tbsp coriander, 1 tsp kasuri methi and ¼ tsp garam masala. mix well.

•finally, enjoy dal tadka with jeera rice.

Jeera rice is the one of the most popular in  lentil dish served in every restaurant .many people prefer to have jeera rice instead of plain basmati rice to go along with dals or curry dishes. The tempering with cumin and fragrant whole spices takes the simple rice dish a level notch up.This jeera rice recipe gives a restaurant style taste and is mildly spiced, fragrant and tastes too good with full-on flavors from the cumin seeds.

Ingredients of jeera rice :-

• 2 tablespoons oil or 1.5 tablespoon ghee (clarified butter)


• 2 teaspoons cumin seeds


•1 green chilli - chopped, optional


• 1 tablespoon chopped coriander leaves


How to make restaurant style jeera rice 


•Heat oil in a small pan. Add cumin/jeera.

•Let them crackle. They have to be fried well otherwise you will taste uncooked cumin in the rice.

•Add the green chilies. Stir for a few seconds. No need to brown the chilies.

•Add the tempering to the hot or warm rice.

• With a fork, gently mix the tempering with the rice grains. Even if some rice grains break, its alright. Do gently taking care so as not to break the rice grains.

• Add coriander and gently mix or garnish the rice with coriander at the time of serving.

• Serve jeera rice hot or warm with a dal.
